Almost one week into Veganuary and I’m sitting at my laptop trying to type, one finger down, due to a fight with avocado stone. Result – steri-strips and a massive bandage. I bet this doesn’t happen to deliciously Ella…
Anyway, Clean Eating brigade aside, so far I haven’t found being vegan difficult at all. But that’s probably because all my meals (except breakfast) are being provided by the wonderful folk at Miller Green here in Bristol. Sue and her team cook every day and deliver all over the city and have so far converted me to the fact that eating vegan will probably be my look from now on.
The featured image was an incredible Sri Lankan cashew nut, green bean and potato curry. My other favourite, was the Butternut squash and red lentil stew with ginger, sweet smoked paprika and roasted peppers. All dishes and ingredients are in perfect harmony with what we need to eat at this time of year so it fits beautifully with Chinese Medicine theory.
Have I had any temptations? Yes I have. Chocolate and cheese were calling me in the supermarket but I resisted. I made the vegan decision not to change my life, but rather to support animal welfare and the environment and the films I’d watched prior are still quite firmly stuck in my mind. I’ve converted to oat milk from Oatly which I love and is one of the main ingredients for today’s breakfast bircher which is sitting in the fridge along with loads of fruit, veggies and the amazing Cocoyo which is providing the dessert hit I need.
So, overall I feel good, my skin is already looking better, and I have plenty of energy…just don’t let me get vegangelical – yet!
